Chocolate Fudge Cake with Peanut Butter Icing.


This was our Vday dessert It was a hit. OMG I need to make peanut butter icing more often. DROOL

  5. To make cake
    2 1/4 cups sugar
    1 3/4 cup flour
    1 cup cocoa
    1 1/2 teaspoon baking soda
    1 teaspoon salt
    1 1/2 teaspoon baking powder
    2 eggs
    1 cup milk
    1/2 cup veg oil
    2 teaspoons vanilla
    1 cup hot water (can be boiled but doesn't have to be, just make it hot)


    to make icing:
    1/2 cup peanut butter (smooth)
    3 cups powdered Sugar
    6-7 tablespoons milk

    Directions:
    Preheat oven to 350 degrees.
    Grease well or fkour heavily 13x9" pan
    Mix all dry ingredients in large bowl
    Add eggs, milk, oil ans vanilla\
    Beat for a couple minutes till smooth and creamy
    Stir in hot water.WILL BE THIN
    Pour in pan
    Bake 30 minutes or until tooth pick inserted comes out clean.
    Let cool, then top with icing.

    Icing
    Cream peanut butter and powdered sugar
    Add enough milk to make a creamy paste one tablespoon at a time.
