haha, yeah recipe whoring on the blog. I have scoured loads of recipes online but trusted and true ones I would prefer. I think he would like a German potato salad the best, as it seems to always call for some mixture of skin on potatoes and bacon, lol. What man doesn't love bacon, well mine does anyways.

I made the BEST potato salad last week for a family reunion. Bacon & Egg potato salad, to be precise. YUMMY! I kind of eyeballed it, but here's a rough idea:
ReplyDelete10-12 medium sized red potatoes - boiled, leave skin on and cube
5 green onions, chopped
4 hard boiled eggs, cubed
10 strips of crisp bacon, crumbled (ok, I cut mine into squares first and then cooked it - it was easier)
Combine all of the above then make the Dressing (dressing should be a pale, pale yellow colour when mixed)
2c. miracle whip
3 Tbsp mustard
2 Tbsp sweet green relish
Combine above 3 ingredients together, then pour onto potato mixture.
It is SO GOOD!
